Description

Made with fresh pineapple and coconut cream, this Pina Colada Mocktail is refreshing, delicious and hydrating too! The perfect drink to beat the summer heat.


Ingredients

Scale

2 cups fresh chopped pineapple

1/4 cup coconut cream

1 tablespoon freshly squeezed lime juice

1/2 teaspoon vanilla

pinch of salt

1 to 2 cups ice

lime wedges, to garnish


Instructions

  1. To a blender, add chopped pineapple, coconut cream, lime juice, vanilla extract and salt and blend until smooth.
  2. Add ice and blend again until thick and frothy and free of large ice chunks. Add more ice to reach desired consistency, if necessary.
  3. Pour into glasses and garnish with a lime wedge.

Notes

Frozen pineapple: can be used in place of fresh pineapple, you will need less ice when using frozen pineapple. You may also need a splash of water or juice to get the blender mixing properly.

For an “on the rocks” pina colada: replace fresh pineapple with 100% pineapple juice and combine all ingredients in a cocktail shaker. Shake until well combined and strain into glasses of fresh ice.
