Description
Made with fresh pineapple and coconut cream, this Pina Colada Mocktail is refreshing, delicious and hydrating too! The perfect drink to beat the summer heat.
Ingredients
2 cups fresh chopped pineapple
1/4 cup coconut cream
1 tablespoon freshly squeezed lime juice
1/2 teaspoon vanilla
pinch of salt
1 to 2 cups ice
lime wedges, to garnish
Instructions
- To a blender, add chopped pineapple, coconut cream, lime juice, vanilla extract and salt and blend until smooth.
- Add ice and blend again until thick and frothy and free of large ice chunks. Add more ice to reach desired consistency, if necessary.
- Pour into glasses and garnish with a lime wedge.
Notes
Frozen pineapple: can be used in place of fresh pineapple, you will need less ice when using frozen pineapple. You may also need a splash of water or juice to get the blender mixing properly.
For an “on the rocks” pina colada: replace fresh pineapple with 100% pineapple juice and combine all ingredients in a cocktail shaker. Shake until well combined and strain into glasses of fresh ice.
