Crispy Roasted Potatoes with Herb Dressing

Simple garlic roasted potatoes get a fresh upgrade with a chopped herb and lemon dressing. Extra crispy and super delicious!

  • 2 lbs baby potatoes halved or quartered
  • 2 tbsp olive oil
  • ¼ tsp salt
  • ½ tsp black pepper
  • 3 large garlic cloves


  • 3 tbsp olive oil
  • 1 tbsp lemon juice
  • ¼ cup parsley (flat leaf or curly) finely chopped
  • 2 tbsp mint leaves finely chopped
  • 2 tsp sugar
  • 1 tsp Dijon mustard
  • ¼ tsp salt
  • ½ tsp black pepper


  • Crispy Roasted Potatoes: Toss sliced potatoes with oil, salt and pepper. Place on a lined baking sheet, cut-side down in a single layer. Bake at 400°F for 25 minutes. Stir, add sliced garlic and bake another 15 minutes.
  • Herb Dressing: Whisk all dressing ingredients together and drizzle over warm potatoes, reserving some for serving, if desired.
