Crispy Roasted Potatoes with Herb Dressing
Simple garlic roasted potatoes get a fresh upgrade with a chopped herb and lemon dressing. Extra crispy and super delicious!

- 2 lbs baby potatoes halved or quartered
- 2 tbsp olive oil
- ¼ tsp salt
- ½ tsp black pepper
- 3 large garlic cloves
Dressing
- 3 tbsp olive oil
- 1 tbsp lemon juice
- ¼ cup parsley (flat leaf or curly) finely chopped
- 2 tbsp mint leaves finely chopped
- 2 tsp sugar
- 1 tsp Dijon mustard
- ¼ tsp salt
- ½ tsp black pepper
Crispy Roasted Potatoes: Toss sliced potatoes with oil, salt and pepper. Place on a lined baking sheet, cut-side down in a single layer. Bake at 400°F for 25 minutes. Stir, add sliced garlic and bake another 15 minutes.
Herb Dressing: Whisk all dressing ingredients together and drizzle over warm potatoes, reserving some for serving, if desired.
