Quick & Cheesy Broccoli Melts

Tender garlicky broccoli piled atop toasty bread and broiled under a good sprinkle of cheese. These melts are nutritious, delicious and budget-friendly!

  • 4 slices seedy bread
  • 2 tsp Dijon mustard
  • 2 tsp mayonnaise
  • 2 cups broccoli crown and stalks, chopped small
  • 2 cloves garlic minced
  • 2 tsp lemon juice
  • 1 cup shredded cheese (white cheddar, provolone, etc.)
  • chili flakes, salt + pepper


  • Broccoli: add chopped broccoli and a splash of water to a saute pan over medium heat. Cover and allow to steam 3-4 minutes. Remove lid, add garlic, lemon juice, salt and pepper. Cook uncovered for another 2-3 minutes until broccoli is bright green and tender.
  • Melts: meanwhile, toast the bread on both sides. Mix together the mayonnaise and mustard and spread evenly on each piece of toast. Pile a quarter of the broccoli mixture onto each slice and top with ΒΌ cup shredded cheese.
  • Sprinkle on some extra chili flakes and broil under high heat for 3-5 minutes, until the cheese is brown and bubbly. Enjoy!
