Crispy Roasted Potatoes with Herb Dressing

A super simple side dish with a little extra wow-factor. These crispy roasted potatoes are deliciously golden brown and drizzled with a fresh and tangy herb dressing. The bright green herbs really make the whole dish pop (visually and into your mouth)! You’ll always have room for just one more bite of these babies.

How to make your roasted potatoes extra-crispy

To get that deep golden color and deliciously caramelized flavour, make sure not to overcrowd your pan. If doubling the recipe, you may need a second baking sheet. You want to be able to place each potato cut-side down on the pan so it can get maximum browning.

For the first 25 minutes of baking, you can also place the baking sheet on a lower rack in your oven to get them closer to the heat. However, keep a close eye on them so they don’t burn!

Do I really need to use fresh herbs?

Using fresh herbs is key for the dressing’s vibrant green color and bright taste. That being said, dried herbs can be used in a pinch. Keep in mind though that dried are more potent than fresh, so you’ll need to use less. A typical ratio for herbs is 1 tbsp fresh = 1 tsp dried OR simply use one-third as much dried herb as the recipe indicates for fresh.

And feel free to switch up the herbs too! Use all parsley, add more mint, throw in some fresh thyme or basil. As long as you have around 6 tablespoons total, get as creative as you like!

Storage notes:

While these Crispy Roasted Potatoes with Herb Dressing will keep well in the fridge for a few days, re-heating in the microwave will make the potatoes lose their crunch. If preparing for a few days at a time, serve the dressing on the side and store separately from the potatoes. That way you can reheat leftovers for a few minutes under the broiler to revive the crispiness!

Description

Simple garlic roasted potatoes get a fresh upgrade with a chopped herb and lemon dressing. Extra crispy and super delicious!


Ingredients

Scale
  • 2 lbs baby potatoes (halved or quartered)
  • 2 tbsp olive oil
  • ¼ tsp salt
  • ½ tsp black pepper
  • 3 large garlic cloves

Dressing

  • 3 tbsp olive oil
  • 1 tbsp lemon juice
  • ¼ cup parsley (flat leaf or curly) (finely chopped)
  • 2 tbsp mint leaves (finely chopped)
  • 2 tsp sugar
  • 1 tsp Dijon mustard
  • ¼ tsp salt
  • ½ tsp black pepper

Instructions

  1. Crispy Roasted Potatoes: Toss sliced potatoes with oil, salt and pepper. Place on a lined baking sheet, cut-side down in a single layer. Bake at 400°F for 25 minutes. Stir, add sliced garlic and bake another 15 minutes.
  2. Herb Dressing: Whisk all dressing ingredients together and drizzle over warm potatoes, reserving some for serving, if desired.
